Italian proverbs. How do you say in Italian: “Don’t judge a book by its cover”?

In Italian this proverb is translated as: L’abito no fa il monaco. It literally means “the robe doesn’t make you a monk”.
As for why we talk about Monks to say “don’t be judgemental”? I really can’t think of a reason.
