Thank you to everybody who have sent enquiries for Italian cookery classes with Learn Italian Manchester! I feel that Taste Italian – Speak Italian cookery classes encapsulate my two passion: Italian food and teaching Italian in Manchester. I agree the 2 hours Italian cookery classes are a great Christmas gift idea for somebody special and let’s face it: they are totally different from a gift purchased on the high street.
A few people have asked for my family recipe for one of the most popular desserts in Italy: Tiramisu.
Tiramisu’ is probably the best known Italian pudding in the world, but perhaps not many people are aware of the meaning of its name. Literally translated, tira-mi-su’ means “pick-me-up”. The espresso coffee makes it quite invigorated when we eat it, don’t you think? But a small slip in the spelling of its name can create an amusing mistake: a few years ago we went to a pub in Manchester (sorry I can’t remember the name!) I happened to glance up at the menu’ written in chalk on the blackboard: one of the desserts on offer was “tiramuso”! I giggling and had to explain to my other half that the misspelling, tira-muso, means “pull-a sulky face”, quite the opposite of the original meaning!
A good Tiramisu’ is always a nice treat, but it’s not the sort of thing you make everyday, as it’s a very rich and time consuming recipe (too much of it will pull your cholesterol up instead of your morale). But to those who have asked me here’s my family recipe:
Ingredientes:
– 3 free range eggs
– 6 flat tbsp of sugar
– 250gr of Mascarpone cheese
– 250 ml of double cream
– Cold coffee to soak the biscuits
– Savoiardi or sponge finger biscuits (aprox 2 packs, of course depending on the size of dish used)
– Cocoa powder
– Optional: 3 tbsp of any spirit of your choice (usually Marsala or Brandy)
Preparation:
1) Separate egg yolks and whites
2) In a bowl add the yolks and the sugar, beat until mix has risen and turned into a light yellow colour
3) In another bowl beat whites until smooth and stiff and can make peaks, leave aside
4) Add mascarpone cheese bit by bit to yolks and sugar mix. Mix well.
5) In a separate bowl beat double cream until liquid becoming a stiff paste
6) Add bit by bit to yolks, sugar and mascarpone mix, mix well.
7) Add whites to mix, mixing delicately until all ingredients are well mixed and combined
8) Prepare container by placing a layer at the bottom of biscuits which have individually soaked very lightly in the cold coffee.
9) Add a layer of the cream mixture on top of biscuits and spread well so as to avoid places without cream.
10) Continue to create the layers of biscuits and cream until reaching the top of the container.
11) When layers have reached the top of the container sprinkle the cocoa powder using a small colander as to make it light and powdery.
12) Place in fridge for at least 8hours before eating for better consistency.
